Ingredients

4 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 cup carrots, grated

1/2 cup fresh cilantro, chopped

1/4 cup green onions, thinly sliced

1/2 cup mayonnaise

2 tablespoons lime juice (freshly squeezed)

1 tablespoon honey or agave syrup

1 tablespoon apple cider vinegar

1/2 teaspoon garlic powder

Salt and pepper to taste

Instructions

Prepare the Vegetables: In a large bowl, combine the finely shredded green cabbage, red cabbage, and grated carrots. Toss gently to mix the colors and textures.

Chop the Greens: Add the chopped cilantro and sliced green onions to the bowl with the cabbage and carrots. This will add vibrant flavor and freshness to the coleslaw.

Make the Dressing: In a separate small bowl, whisk together the mayonnaise, freshly squeezed lime juice, honey (or agave syrup), apple cider vinegar, and garlic powder. Mix until smooth and creamy. Taste and season with salt and pepper as desired.

Combine: Pour the dressing over the cabbage mixture. Toss everything together gently until well combined and the vegetables are evenly coated with the dressing.

Chill: Cover the coleslaw and refrigerate for at least 30 minutes to allow the flavors to meld together. This also helps the cabbage soften slightly.

Serve: After chilling, give the coleslaw a quick toss and taste for seasoning again. Adjust salt and pepper if necessary before serving. Enjoy this bright and refreshing side dish with your favorite grilled meats or tacos!
