Ingredients

2 ripe mangoes, peeled and diced

1 medium red onion, finely chopped

2 medium tomatoes, diced

1 fresh jalapeño, seeds removed and finely chopped (adjust to desired spiciness)

1/2 cup fresh cilantro, chopped

Juice of 2 limes

Salt, to taste

1/4 teaspoon ground cumin (optional)

1 tablespoon olive oil (optional, for richness)

Instructions

In a large mixing bowl, combine the diced mangoes, chopped red onion, and diced tomatoes.

Add the finely chopped jalapeño to the mixture. If you like it spicier, you can keep some seeds or add another jalapeño.

Stir in the chopped cilantro, lime juice, and season with salt to taste. If you would like a slightly earthy flavor, sprinkle in the ground cumin.

For an extra touch of flavor, drizzle with olive oil and gently toss to combine all ingredients thoroughly.

Taste and adjust seasoning, adding more salt or lime juice as needed.

Let the salsa sit for at least 20 minutes before serving, allowing the flavors to meld together beautifully.

Serve chilled as a refreshing dip with tortilla chips or as a vibrant topping for grilled chicken, fish, or tacos.
