Broccoli Cheddar Quinoa Casserole

1 cup quinoa, rinsed

2 cups vegetable broth (or water)

2 cups chopped broccoli florets

1 cup shredded sharp cheddar cheese (plus extra for topping)

1/2 cup grated Parmesan cheese

1 medium onion, diced

3 cloves garlic, minced

1 cup whole milk (or plant-based milk)

2 large eggs

1 teaspoon Dijon mustard

1 teaspoon smoked paprika

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1 tablespoon olive oil

1/4 cup breadcrumbs (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with a bit of olive oil.

    Cook the quinoa: In a medium saucepan, bring the vegetable broth to a boil. Stir in the rinsed quinoa, reduce heat to low, cover, and let simmer for about 15 minutes, or until the quinoa is fluffy and all liquid is absorbed. Set aside.

      Sauté the veggies: In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and sauté for about 5-7 minutes until soft and translucent. Add the minced garlic and sauté for another minute until fragrant.

        Add the broccoli: Add the chopped broccoli to the skillet and stir for about 5-6 minutes until it’s bright green and tender, but still crisp. Remove from heat.

          Combine ingredients: In a large mixing bowl, whisk together the milk, eggs, Dijon mustard, smoked paprika, salt, and black pepper. Stir in the cooked quinoa, sautéed onion and broccoli, and both cheeses (sharp cheddar and Parmesan) until well combined.

            Transfer to dish: Pour the quinoa and vegetable mixture into the prepared baking dish, spreading it out evenly. If desired, sprinkle breadcrumbs and additional cheddar cheese on top for a crispy layer.

              Bake: Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.

                Garnish and serve: Once done, remove from oven and let it cool for 5-10 minutes. Garnish with fresh parsley before serving.
