Broccoli Cheddar Quinoa Casserole

1 cup quinoa, rinsed

2 cups vegetable broth or water

2 cups fresh broccoli florets (or frozen, thawed)

1 cup shredded sharp cheddar cheese (plus extra for topping)

1 cup cottage cheese

2 large eggs, lightly beaten

1/2 cup milk (or non-dairy milk)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1 teaspoon Dijon mustard

1 teaspoon olive oil (optional, for greasing)

1/4 cup grated Parmesan cheese (optional, for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with olive oil or cooking spray.

    Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the quinoa is cooked and liquid is absorbed. Fluff with a fork and set aside.

      Prepare the Broccoli: If using fresh broccoli, steam or blanch the florets for about 3-4 minutes until vibrant green but still crisp. If using frozen broccoli, ensure it's fully thawed and drained.

        Mix Ingredients: In a large mixing bowl, combine the cooked quinoa, steamed broccoli, shredded cheddar cheese, cottage cheese, beaten eggs, milk, garlic powder, onion powder, salt, pepper, and Dijon mustard. Stir well until everything is evenly mixed.

          Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it out evenly. If desired, add some extra shredded cheddar and/or Parmesan on top.

            Bake the Casserole: Place the dish in the preheated oven and bake for 30-35 minutes, or until the casserole is bubbly and the cheese on top is melted and golden.
