Buffalo Chickpea Mac and Cheese

1 cup elbow macaroni

1 can (15 oz) chickpeas, drained and rinsed

1 cup buffalo sauce (divided)

2 cups shredded sharp cheddar cheese

1 cup mozzarella cheese, shredded

1/2 cup milk (dairy or plant-based)

1/4 cup cream cheese, softened

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Green onions, for garnish (optional)

Crumbled blue cheese, for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Chickpeas: In a large bowl, mash half of the chickpeas with a fork or potato masher until chunky. Leave the other half whole for added texture. Toss the mashed and whole chickpeas with 1/2 cup of buffalo sauce and set aside.

      Make the Cheese Sauce: In a medium saucepan over medium heat, add olive oil and allow it to warm. Stir in the garlic powder, onion powder, and smoked paprika, cooking for about 1 minute until fragrant.

        Add Cream and Cheese: Reduce the heat to low, then add the cream cheese and milk to the saucepan. Stir until smooth. Gradually mix in the shredded cheddar and mozzarella cheese, stirring continuously until melted and creamy. Season with salt and pepper to taste.

          Combine: In a large pot, combine the cooked macaroni, chickpeas mixed with buffalo sauce, and the cheese sauce. Stir well to combine all ingredients. If desired, add more buffalo sauce to taste.

            Bake (optional): Preheat your oven to 350°F (175°C). Pour the mac and cheese mixture into a greased baking dish. If desired, top with extra cheese and bake for 15-20 minutes until bubbly and golden on top.

              Garnish and Serve: Once baked, remove from the oven (if baked). Allow to cool slightly. Garnish with sliced green onions and crumbled blue cheese if using. Serve warm.
