Buffalo Chickpea & Ranch Pita Pizzas

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

½ cup buffalo sauce (adjust to taste)

4 whole wheat pitas

1 cup shredded mozzarella cheese

½ cup ranch dressing

1 cup baby spinach or arugula

½ cup cherry tomatoes, halved

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish, optional)

Salt and pepper to taste

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Chickpeas: In a medium bowl, combine the drained chickpeas, olive oil, salt, and pepper. Toss to coat the chickpeas evenly. Add half of the buffalo sauce to the chickpeas and stir to coat.

      Roast the Chickpeas: Spread the seasoned chickpeas on a baking sheet and roast in the preheated oven for about 20 minutes, or until they are crispy and slightly golden, stirring halfway through.

        Assemble the Pita Pizzas: While the chickpeas are roasting, lay out the whole wheat pitas on a baking sheet. Spread a generous tablespoon of ranch dressing on each pita, followed by a sprinkle of shredded mozzarella cheese.

          Add the Chickpeas: Once the chickpeas are done roasting, remove them from the oven and distribute them evenly on top of the cheese-covered pitas.

            Drizzle with Buffalo Sauce: Drizzle extra buffalo sauce over the chickpeas (as much as you desire for spice level) and finish with an even layer of the remaining mozzarella cheese.

              Bake: Return the pita pizzas to the oven and bake for an additional 10-12 minutes, or until the cheese has melted and is bubbly, and the edges of the pitas are crispy.

                Garnish and Serve: Remove the pizzas from the oven and let them cool slightly. Top with fresh spinach or arugula, halved cherry tomatoes, and a sprinkle of sliced green onions and parsley for a pop of color and flavor.

                  Cut and Enjoy: Slice the pizzas into wedges and serve warm, with additional ranch dressing or buffalo sauce on the side for dipping, if desired.
