1/4 cup granulated sugar

1 tablespoon active dry yeast

1 cup whole milk, warmed to about 110°F (43°C)

2 large eggs, at room temperature

1 teaspoon salt

1/4 teaspoon baking soda (optional)

Additional melted butter for brushing, as needed

Activate the Yeast: In a small bowl, combine the warm milk and sugar. Sprinkle the yeast over the surface and let it sit for about 5-10 minutes until frothy.

    Mix the Dough: In a large mixing bowl, combine 3 cups of flour and the salt. Once the yeast mixture is frothy, add it to the flour mixture, along with the melted butter and eggs. Mix until combined.

      Kneading: Gradually add the remaining 1 cup of flour, mixing until the dough comes together. Turn it out onto a floured surface and knead for about 8-10 minutes until smooth and elastic. If the dough is too sticky, you can add a little more flour as needed.

        First Rise: Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 to 1.5 hours, or until doubled in size.

          Shape the Rolls: Once risen, punch down the dough and transfer it to a lightly floured surface. Divide it into 12 equal pieces. Roll each piece into a smooth ball and then shape them by folding the edges toward the center for a flat bottom.

            Prepare for Second Rise: Place the shaped rolls in a greased 9x13 inch baking dish, ensuring they touch each other slightly. Cover with a towel again and let them rise for another 30-45 minutes until puffed.
