1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon ground cinnamon

16 oz (2 packages) cream cheese, softened

1 cup ricotta cheese

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ teaspoon almond extract

½ cup mini chocolate chips

Zest of 1 orange (optional, for a citrus hint)

For the Topping:

½ cup powdered sugar

1 tablespoon milk (or more for desired consistency)

Extra mini chocolate chips & crushed pistachios for garnish (optional)

Instructions
 

Prepare the Crust:

    - Preheat your oven to 325°F (163°C).

      - In a medium bowl, mix together the graham cracker crumbs, melted butter, granulated sugar, and ground cinnamon until well combined.

        - Press the mixture into the bottom of a greased 9x9-inch baking dish to form an even layer. Bake in the preheated oven for 10 minutes. Remove and allow to cool slightly.

          Make the Cheesecake Filling:

            - In a large mixing bowl, beat together the softened cream cheese and ricotta cheese until smooth and creamy.

              - Add the granulated sugar, eggs, vanilla extract, and almond extract. Mix until fully incorporated and no lumps remain.

                - Gently fold in the mini chocolate chips and orange zest, if using, until evenly distributed.

                  Combine and Bake:

                    - Pour the cheesecake filling over the prepared crust, spreading it evenly.

                      - Bake for 35-40 minutes, or until the center is set and slightly jiggles when shaken. It should not be overly wobbly.

                        - Turn off the oven, crack the door open slightly, and let the cheesecake cool in the oven for 1 hour. This helps prevent cracking.

                          Chill:
