Caprese Chicken with Balsamic Glaze

4 boneless, skinless chicken breasts

2 cups cherry tomatoes, halved

8 oz fresh mozzarella cheese, sliced

1 cup fresh basil leaves

1/2 cup balsamic vinegar

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper, to taste

1 teaspoon Italian seasoning (optional)

Prepare the Balsamic Glaze: In a small saucepan, combine the balsamic vinegar and honey (if using) over medium heat. Bring to a simmer, reduce the heat, and let it cook for about 10-15 minutes, stirring occasionally, until it thickens and becomes syrupy. Set aside to cool.

    Preheat the Oven: Preheat your oven to 375°F (190°C).

      Prepare the Chicken: Season both sides of the chicken breasts with salt, pepper, and Italian seasoning (if using).

        Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 5-7 minutes on each side until golden brown. Do not cook through; you want them to be nicely browned on the outside.

          Add Garlic and Tomatoes: Add the minced garlic and halved cherry tomatoes to the skillet around the chicken. Toss gently to combine, allowing the garlic to cook for about 1 minute.

            Add Cheese and Bake: Top each chicken breast with slices of fresh mozzarella cheese. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through (165°F/75°C internal temperature) and the cheese is melted and bubbly.

              Add Fresh Basil: Remove the skillet from the oven and sprinkle the fresh basil leaves over the chicken before drizzling the balsamic glaze generously over the top.

                Serve: Serve the Caprese Chicken warm with a side of crusty bread, roasted vegetables, or a fresh green salad to balance the flavors.
