8 oz (about 2 cups) fusilli pasta (or your choice of pasta)

1 cup cherry tomatoes, halved

8 oz fresh mozzarella balls (bocconcini), halved or quartered

1 cup fresh basil leaves, torn

1/2 cup arugula (for added peppery flavor)

1/4 cup extra-virgin olive oil

2 tbsp balsamic glaze

1 clove garlic, minced (optional)

Salt and pepper, to taste

1/4 tsp red pepper flakes (optional for a kick)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fusilli pasta and cook according to package instructions until al dente. Drain the pasta and rinse it under cold water to stop the cooking process. Set aside.

    Prepare the Vegetables: While the pasta is cooking, wash and halve your cherry tomatoes, and if using fresh mozzarella balls, halve or quarter them. Tear the basil leaves into smaller pieces to release their oils.

      Mix the Salad: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, mozzarella, torn basil, and arugula.

        Dress the Salad: In a small bowl or jar, whisk together the extra-virgin olive oil, balsamic glaze, minced garlic (if using), salt, pepper, and red pepper flakes. Pour the dressing over the pasta salad and gently toss to combine, ensuring all the ingredients are well-coated.

          Chill and Serve: For the best flavor, let the salad sit for at least 15-30 minutes in the refrigerator to allow the flavors to meld. Serve chilled or at room temperature.
