Caprese Pasta Salad with Mozzarella Pearls

8 oz. (about 2 cups) of fusilli pasta (or your choice of pasta)

1 cup cherry tomatoes, halved

1 cup mozzarella pearls, drained

1 cup fresh basil leaves, torn

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 clove garlic, minced

Salt and pepper, to taste

Optional: 1/4 cup toasted pine nuts for added crunch

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fusilli pasta according to the package directions until al dente. Drain and rinse under cold water to cool it down quickly, then set aside.

    Prepare the Dressing: In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, minced garlic, salt, and pepper. Adjust seasoning to taste.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, mozzarella pearls, and torn basil leaves. If using, add the toasted pine nuts for extra texture and flavor.

        Dress the Salad: Pour the dressing over the pasta salad mixture and gently toss until everything is evenly coated.
