16 oz (2 packages) cream cheese, softened

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup sour cream

1 teaspoon ground cinnamon

2 large apples, peeled, cored, and diced (Granny Smith or Honeycrisp work well)

For the caramel topping:

1 cup caramel sauce (store-bought or homemade)

½ teaspoon sea salt (optional)

½ teaspoon ground cinnamon (for garnish)

Preheat the Oven: Preheat your oven to 325°F (160°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang on the sides for easy removal later.

    Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, ¼ cup sugar, and 1 teaspoon cinnamon. Mix until well combined. Press the mixture firmly into the bottom of the prepared baking pan. Bake for 8-10 minutes, then remove from the oven and let it cool slightly.

      Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the ¾ cup sugar and beat until well incorporated. Add the eggs one at a time, mixing well after each addition.
