Caramelized Onion and Goat Cheese Tart

1 sheet of puff pastry (thawed if frozen)

3 large onions (yellow or sweet), thinly sliced

2 tablespoons olive oil

2 tablespoons unsalted butter

1 teaspoon sugar

1 teaspoon balsamic vinegar

Salt and pepper to taste

4 oz fresh goat cheese, crumbled

1 cup ricotta cheese

2 large eggs

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

½ cup grated Parmesan cheese

Fresh arugula for garnish (optional)

Prepare the Puff Pastry: Preheat your oven to 400°F (200°C). Roll out the puff pastry on a lightly floured surface and place it in a 9-inch tart pan, trimming the excess pastry from the edges. Prick the base with a fork to prevent it from puffing up during baking. Chill in the fridge for about 15 minutes.

    Caramelize the Onions: In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions, stirring to coat them well. Cook for about 15-20 minutes, stirring occasionally until they become golden brown and soft. Add the sugar and balsamic vinegar, then season with salt and pepper. Continue cooking for another 5-10 minutes until well caramelized. Remove from heat and set aside to cool slightly.

      Mix the Filling: In a mixing bowl, combine the ricotta cheese, crumbled goat cheese, eggs, thyme, salt, and pepper. Blend until the mixture is smooth and creamy.

        Assemble the Tart: Spread the caramelized onions evenly over the puff pastry. Pour the ricotta and goat cheese mixture over the onions, spreading it out gently. Top with grated Parmesan cheese for an extra layer of flavor.

          Bake the Tart: Place the tart in the preheated oven and bake for 25-30 minutes or until the tart is golden and puffed. The filling should be set but a little soft in the center.

            Let It Rest: Once done, remove the tart from the oven and allow it to cool for about 10 minutes. This will help it set further and make it easier to slice.
