1 sheet of puff pastry (thawed, if frozen)

3 large onions (thinly sliced)

2 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon sugar

1 teaspoon balsamic vinegar

Salt and pepper (to taste)

1 cup grated Gruyère cheese

1/2 cup heavy cream

2 large eggs

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Optional: Fresh chives for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Caramelized Onions: In a large skillet over medium heat, add the butter and olive oil. Once melted and hot, add the sliced onions. Sauté the onions for about 10 minutes, stirring occasionally until they start to soften.

      Caramelization Process: Sprinkle the sugar over the onions, then reduce the heat to low. Continue cooking the onions for an additional 20-25 minutes, stirring frequently until they become golden brown and caramelized. Stir in the balsamic vinegar, and season with salt and pepper. Remove from heat and let cool slightly.

        Roll Out the Puff Pastry: While the onions cool, roll out the puff pastry on a lightly floured surface to fit a 9-inch tart pan. Gently press the pastry into the pan and trim any excess edges. Prick the bottom with a fork to prevent it from puffing up.

          Assemble the Tart Filling: In a mixing bowl, whisk together the heavy cream, eggs, thyme, salt, and pepper. Once the caramelized onions have cooled slightly, spread them evenly over the pastry crust. Pour the custard mixture over the onions, ensuring even distribution.

            Add the Cheese: Evenly sprinkle the grated Gruyère cheese on top of the tart.

              Bake the Tart: Place the tart in the preheated oven and bake for 25-30 minutes, or until the pastry is golden brown, and the filling is set and slightly puffed.

                Serve: Let the tart cool for a few minutes before slicing. Garnish with fresh chives if desired. Serve warm or at room temperature.
