Caramelized Onion Pasta with Chilli Oil

12 oz (340g) spaghetti or fettuccine

3 large yellow onions, thinly sliced

4 garlic cloves, minced

2 tbsp olive oil

1 tbsp unsalted butter

1 tsp sugar

½ tsp salt

½ tsp black pepper

1/2 cup grated Parmesan cheese (plus more for serving)

2 tbsp fresh parsley, chopped

2-3 tbsp chili oil (adjust based on your spice preference)

Zest of 1 lemon

Juice of 1/2 lemon

Instructions
 

Cook the Pasta:

    - In a large pot, bring water to a boil and add a generous amount of salt. Cook the spaghetti or fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

      Caramelize the Onions:

        - In a large skillet, heat the olive oil and butter over medium heat. Once melted, add the sliced onions and stir to coat.

          - Sprinkle the sugar, salt, and pepper over the onions. Cook slowly, stirring occasionally, for about 20-25 minutes until the onions are golden brown and caramelized. If they begin to stick to the skillet, add a splash of water to deglaze.

            Add Garlic:

              - Once the onions are caramelized, add the minced garlic to the skillet. Cook for an additional 2-3 minutes until fragrant.

                Combine Pasta and Onions:

                  - Add the drained pasta to the skillet with the onions. Toss well to combine. If the mixture seems dry, pour in a little reserved pasta water until you reach your desired consistency.

                    Season and Serve:

                      - Remove the skillet from heat and stir in Parmesan cheese, lemon zest, and lemon juice. Adjust seasoning if necessary.

                        - Drizzle chili oil over the pasta, mixing it in for heat. Garnish with fresh parsley and additional Parmesan cheese if desired.
