Caramelized Peach and Brie Grilled Sandwiches

Ingredients
  

2 ripe peaches, sliced

4 oz brie cheese, sliced

4 slices of crusty bread (such as sourdough or ciabatta)

2 tbsp unsalted butter

2 tbsp brown sugar

1 tsp vanilla extract

Fresh basil leaves (optional, for garnish)

Pinch of sea salt

Honey, for drizzling (optional)

Instructions
 

Caramelize the Peaches:

    In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced peaches, brown sugar, and vanilla extract. Cook the peaches for about 4-5 minutes until they soften and start to caramelize. Stir occasionally to prevent burning. Remove from heat and set aside to cool slightly.

      Prepare the Bread:

        Take the slices of bread and spread the remaining 1 tablespoon of butter on one side of each slice.

          Assemble the Sandwiches:

            On the unbuttered side of two slices of bread, layer the brie cheese slices evenly. Top with the caramelized peaches and, if desired, a pinch of sea salt. Optionally, add a few fresh basil leaves for a burst of flavor. Place the remaining two slices of bread on top, buttered side up, to form sandwiches.

              Grill the Sandwiches:

                Heat a skillet over medium-low heat. Carefully place the sandwiches in the skillet and grill for about 3-4 minutes or until the bottom is golden brown. Carefully flip the sandwiches and grill the other side for an additional 3-4 minutes until the cheese melts and the bread is toasted.

                  Serve:

                    Remove the sandwiches from the skillet and let them cool for a minute. Cut each sandwich in half and drizzle with honey if desired. Serve warm and enjoy your delicious caramelized peach and brie grilled sandwiches!
