1 cup grated carrot (about 1 large carrot)

1/2 cup rolled oats

1/2 cup chopped walnuts (optional)

1/2 cup raisins or dried cranberries (optional)

Cream cheese frosting (for drizzle, optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

      Cream Butter and Sugars: In a large bowl, using a hand mixer or stand mixer, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).

        Add Egg and Vanilla: Beat in the egg and vanilla extract to the butter-sugar mixture until well incorporated.

          Combine Dry and Wet Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
