3 lbs russet potatoes, peeled and diced

1 cup sharp cheddar cheese, shredded

6 slices bacon, cooked and crumbled

1/2 cup sour cream

1/4 cup cream cheese, softened

1/2 cup milk (more if needed for desired consistency)

4 tbsp unsalted butter, melted

1 tsp garlic powder

Salt and pepper to taste

1/4 cup green onions, sliced (for garnish)

1/2 cup Parmesan cheese, grated (for topping)

Instructions
 

Prepare the Potatoes: In a large pot, add the diced potatoes and enough water to cover them. Bring to a boil over medium-high heat. Cook until the potatoes are fork-tender (about 15-20 minutes), then drain.

    Make the Mashed Potatoes: Return the drained potatoes to the pot. Add the melted butter, sour cream, cream cheese, milk, garlic powder, salt, and pepper. Mash the potatoes until creamy and smooth. Stir in the cheddar cheese and crumbled bacon, reserving some bacon for garnish.

      Assemble the Casserole: Preheat your oven to 350°F (175°C). Transfer the mashed potato mixture into a greased 9x13-inch baking dish, spreading it out evenly.

        Top with Parmesan: Sprinkle the grated Parmesan cheese evenly over the mashed potatoes.

          Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.
