1 cup cooked jasmine rice (cooled)

1 cup sharp cheddar cheese, grated

1/2 cup cornmeal

1/2 cup all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon chili powder

1/2 teaspoon cayenne pepper (adjust for spice preference)

2 large eggs

1/2 cup milk

1/4 cup vegetable oil

1/2 cup diced bell peppers (red or green)

1/4 cup chopped green onions (scallions)

1/2 cup canned diced green chilies (drained)

Instructions
 

Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.

    In a large mixing bowl, combine the cooked jasmine rice, grated cheddar cheese, cornmeal, all-purpose flour, baking powder, salt, black pepper, chili powder, and cayenne pepper. Mix well until all the dry ingredients are evenly combined.

      In a separate bowl, whisk the eggs, milk, and vegetable oil together until well combined.

        Pour the wet ingredients into the dry mixture and stir gently until just combined. Do not overstir; it's okay if there are a few lumps.

          Fold in the diced bell peppers, green onions, and diced green chilies to the batter, ensuring they are evenly distributed.

            Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full, as they will rise during baking.

              Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
