1 cup cornmeal

1 cup all-purpose flour

1 tbsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 cup shredded sharp cheddar cheese

1-2 jalapeños, finely diced (seeds removed for less heat)

1/4 cup granulated sugar

2 large eggs

1 cup buttermilk

1/4 cup unsalted butter, melted

1/4 cup honey

1/2 cup whole corn kernels (fresh, canned, or frozen)

1/2 cup crumbled cornbread (store-bought or homemade for topping)

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Preheat the oven to 375°F (190°C) and grease a 9x9-inch baking dish or a similar size.

    In a large mixing bowl, combine the cornmeal, flour, baking powder, baking soda, and salt. Whisk together until well blended.

      Add the dry ingredients: Stir in the shredded cheddar cheese and diced jalapeños into the dry mixture, ensuring they are evenly distributed.

        In a separate bowl, whisk together the eggs, buttermilk, melted butter, and honey until combined.
