For the crust:

1 ½ cups chocolate cookie crumbs (such as Oreo)

½ cup unsalted butter, melted

2 tablespoons sugar

For the cheesecake filling:

16 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

4 large eggs

8 oz dark chocolate (preferably Godiva), melted and slightly cooled

½ cup sour cream

½ cup heavy cream

For the chocolate ganache:

8 oz dark chocolate (preferably Godiva), chopped

1 cup heavy cream

For garnish:

Whipped cream

Chocolate shavings or cocoa powder (optional)

Fresh berries (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C).

    Prepare the Crust: In a mixing bowl, combine the chocolate cookie crumbs, melted butter, and sugar. Mix until all crumbs are evenly coated. Press this mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Place the crust in the refrigerator to chill while preparing the filling.

      Make the Cheesecake Filling: In a large mixing bowl, beat the cream cheese on medium speed until smooth and creamy. Gradually add the granulated sugar and beat until well combined. Add the vanilla extract and mix.
