1 cup quinoa, rinsed

2 cups beef broth (or water)

1 lb ground beef (or turkey)

2 cups broccoli florets (fresh or frozen)

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil

2 green onions, sliced (for garnish)

Optional: 1 tablespoon soy sauce or tamari for extra flavor

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and beef broth (or water). Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and set aside.

    Sauté the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the ground beef, garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for about 5-7 minutes, breaking up the beef as it cooks until browned and fully cooked.

      Add Broccoli: Once the beef is cooked, add in the broccoli florets. If using fresh, cook for an additional 5-7 minutes until they are tender-crisp. If using frozen, just cook until heated through.

        Combine Ingredients: Stir the cooked quinoa into the beef and broccoli mixture. If you want to add soy sauce, pour it in at this stage and stir until well combined.

          Cheesy Finish: Lower the heat and sprinkle the shredded cheddar cheese over the top. Cover the skillet with a lid for about 2-3 minutes until the cheese melts.
