1 pound ground beef

1 cup quinoa (rinse before cooking)

1 small onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (14.5 oz) diced tomatoes, undrained

1 cup beef broth

1 cup shredded cheddar cheese

1 teaspoon paprika

1 teaspoon cumin

Salt and pepper, to taste

1 cup frozen corn (optional)

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and beef broth. Bring it to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.

      Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until they are soft, about 5 minutes. Stir in the minced garlic and cook for an additional 1 minute.

        Add the Beef: Increase the heat to medium-high, add the ground beef to the skillet, and cook until browned, breaking it up with a spatula, about 7-10 minutes. Drain any excess grease.

          Combine Ingredients: Stir in the diced tomatoes (with their juices), cooked quinoa, corn (if using), paprika, cumin, and season with salt and pepper to taste. Mix until everything is well combined.

            Layer in Casserole Dish: Spread half of the beef and quinoa mixture evenly in a greased 9x13-inch casserole dish. Sprinkle 1/2 cup of shredded cheddar cheese on top, then add the remaining beef and quinoa mixture, finishing with the rest of the cheese on top.

              Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.

                Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
