Cheesy Beef and Quinoa Stuffed Peppers

4 large bell peppers (any color)

1 cup quinoa, rinsed

2 cups beef broth (or water)

1 pound ground beef (lean)

1 cup diced tomatoes (canned or fresh)

1 small onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

1 cup shredded cheese (cheddar or a cheese blend)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Quinoa: In a medium saucepan, combine the rinsed quinoa and beef broth (or water). Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until the quinoa is fluffy and all liquid is absorbed. Remove from heat and set aside.

      Cook Ground Beef: While the quinoa is cooking, heat olive oil in a large skillet over medium heat. Add diced onions and garlic, sautéing until translucent (about 3-4 minutes).

        Add Ground Beef: Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned and completely cooked through (about 6-7 minutes). Drain any excess fat if necessary.

          Combine Ingredients: Stir in the cooked quinoa, diced tomatoes, smoked paprika, cumin, chili powder, salt, and pepper. Mix well until everything is combined and heated through.

            Prepare Peppers: While the filling is cooking, cut the tops off the bell peppers and remove the seeds and membranes. You can lightly roast the peppers in the oven for 10 minutes if you prefer them softer.

              Stuff Peppers: Carefully spoon the beef and quinoa mixture into each pepper until they are filled to the top. Sprinkle the shredded cheese over each stuffed pepper.

                Bake: Place the stuffed peppers in a baking dish and cover with foil. Bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.

                  Garnish and Serve: Remove from the oven and let them cool for a few minutes. Garnish with fresh cilantro or parsley if desired, and serve warm.
