Cheesy Beef and Quinoa Stuffed Peppers

4 large bell peppers (any color)

1 cup quinoa, rinsed

2 cups beef broth (or water)

1 lb ground beef (preferably lean)

1 small onion, diced

3 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

1 tsp smoked paprika

1 tsp cumin

1/2 tsp black pepper

1 cup shredded cheddar cheese (plus extra for topping)

1/2 cup corn (canned or frozen)

1/4 cup fresh cilantro, chopped (for garnish)

Salt to taste

Prepare the Peppers: Preheat your oven to 375°F (190°C). Carefully slice the tops off the bell peppers and remove the seeds and membranes. Brush the outside of the peppers lightly with olive oil and place them upright in a baking dish.

    Cook the Quinoa: In a medium saucepan, bring the beef broth (or water) to a boil. Add the rinsed quinoa, reduce heat to low, cover, and let simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and set aside.

      Cook the Beef Mixture: In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and garlic, cooking until the onion becomes translucent, about 3-4 minutes. Add the ground beef to the skillet, breaking it up with a spatula and cooking until browned and cooked through, about 5-7 minutes. Drain any excess fat.

        Mix It All Together: To the beef mixture, stir in the diced tomatoes, cooked quinoa, corn, smoked paprika, cumin, black pepper, and salt. Combine well and cook for an additional 2-3 minutes to heat everything through. Remove from heat, and stir in 1 cup of shredded cheddar cheese until melted and well incorporated.
