1 lb ground beef

1 can (15 oz) black beans, drained and rinsed

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

8 small flour tortillas

2 cups shredded cheese (cheddar and Monterey Jack blend)

1 can (10 oz) red enchilada sauce

1/4 cup fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook, breaking it apart with a spatula, until browned and fully cooked (about 5-7 minutes). Drain excess grease.

      Add Aromatics: Add the chopped onion and minced garlic to the skillet. Sauté for about 3-4 minutes, until the onion is translucent.

        Mix in Spices: Stir in the cumin, chili powder, paprika, salt, and pepper. Mix thoroughly and cook for another minute.

          Combine with Black Beans: Gently fold in the drained black beans. Remove the skillet from heat.

            Prepare the Tortillas: Warm the flour tortillas in the microwave for about 20-30 seconds to make them pliable.

              Fill the Tortillas: Place about 1/3 cup of the beef and black bean mixture into the center of each tortilla. Sprinkle a generous tablespoon of shredded cheese on top. Roll the tortillas tightly and place them seam side down in a greased 9x13 inch baking dish.

                Add Sauce: Pour the red enchilada sauce evenly over the rolled tortillas. Sprinkle the remaining cheese on top.

                  Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                    Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh chopped cilantro. Serve with sour cream on the side.
