Cheesy Broccoli Stuffed Baked Potatoes

4 large russet potatoes

2 cups fresh broccoli florets

1 cup shredded cheddar cheese (plus extra for topping)

½ cup cream cheese, softened

¼ cup sour cream

2 tablespoons butter

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Optional: chopped chives or green onions for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Bake the Potatoes: Scrub the russet potatoes under running water. Prick each potato several times with a fork. Place them on a baking sheet and bake in the preheated oven for about 45-60 minutes or until they are tender and can be easily pierced with a fork.

      Prepare the Broccoli: While the potatoes are baking, you can prepare the broccoli. In a small pot of boiling water, blanch the broccoli florets for about 2-3 minutes until bright green and tender-crisp. Drain and transfer to an ice bath to stop the cooking process. Once cooled, chop into smaller pieces.

        Mix the Cheese Filling: In a large mixing bowl, combine the blanched broccoli, shredded cheddar cheese, cream cheese, sour cream, butter, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are well combined.

          Stuff the Potatoes: Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Carefully slice each potato in half lengthwise and gently scoop out some of the flesh, leaving a small border around the edges. Add the scooped potato flesh to the cheese and broccoli mixture and stir until well incorporated.

            Fill the Potatoes: Generously spoon the cheesy broccoli mixture back into the hollowed-out potato skins. Sprinkle additional shredded cheddar cheese on top of each stuffed potato.

              Final Bake: Place the stuffed potatoes back on the baking sheet. Return them to the oven for an additional 15-20 minutes, or until the cheese is melted and bubbly.
