4 large russet potatoes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes

1 medium onion, chopped

2 cloves garlic, minced

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon oregano

Salt and pepper to taste

For the Cheese Sauce:

2 tablespoons butter

2 tablespoons all-purpose flour

1 cup milk

1 ½ cups shredded cheddar cheese

1 teaspoon hot sauce (optional)

For Garnish:

Sliced jalapeños

Chopped green onions

Prepare the Fries:

    - Preheat your oven to 425°F (220°C).

      - Wash and peel the russet potatoes, then cut them into thin fries or wedges.

        - In a large bowl, toss the potato slices with olive oil, garlic powder, paprika, and season with salt and pepper.

          - Spread the fries in a single layer on a baking sheet lined with parchment paper.

            - Bake for 30-35 minutes, flipping halfway, until they are golden brown and crispy.

              Cook the Chili:

                - In a large skillet over medium heat, add a dash of olive oil and sauté the chopped onion for 2-3 minutes until translucent.

                  - Add the minced garlic and cook for another minute until fragrant.
