In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onion and cook until translucent, about 4-5 minutes. Incorporate the minced garlic and sauté for an additional minute until fragrant.
Sprinkle the flour over the onion and garlic mixture, stirring well to combine. Cook for about 1 minute, then gradually whisk in the milk. Keep stirring until the mixture starts to thicken, approximately 3-4 minutes.
Lower the heat and stir in the grated cheddar cheese until melted and fully combined. Add the shredded turkey, peas, Dijon mustard, salt, and pepper to taste. Mix everything well, allowing the mixture to heat through for another 2-3 minutes. Remove from heat.
Preheat a grill pan or a non-stick skillet over medium heat. Spread a thin layer of butter on one side of each slice of bread. Place the slices butter-side down on the grill pan. Spoon a generous amount of the turkey-pea mixture onto the unbuttered side of each slice.
Top each with another slice of bread, butter-side up. Grill the sandwiches for about 4-5 minutes on each side, or until golden brown and crispy, and the filling is heated through and gooey.
Once cooked, remove the melts from the pan and let cool for a minute. Cut them in half, garnish with chopped fresh parsley, and if desired, drizzle a few drops of hot sauce for extra flavor. Serve immediately and enjoy your Cheesy Creamed Turkey Pea Melt!
