Ingredients
  

4 large bell peppers (any color)

6 large eggs

1 cup fresh spinach, chopped

1 cup shredded cheddar cheese

1/2 cup diced tomatoes (fresh or canned)

1/4 cup diced onion

1/4 tsp garlic powder

1/4 tsp paprika

Salt and pepper to taste

Olive oil for sautéing

Fresh herbs for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Bell Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of each pepper with a little olive oil. Place them upright in a baking dish.

      Sauté the Vegetables: In a skillet over medium heat, add a splash of olive oil. Sauté the diced onion until translucent, about 2-3 minutes. Add the chopped spinach, cooking until wilted (about another 2 minutes). Remove from heat.

        Mix the Egg Filling: In a large bowl, whisk together the eggs, garlic powder, paprika, salt, and pepper. Stir in the sautéed spinach mixture and diced tomatoes. Fold in half of the shredded cheddar cheese.

          Fill the Bell Peppers: Carefully pour the egg and spinach mixture into each prepared bell pepper, filling them about 3/4 full to allow space for the eggs to rise as they cook.

            Add Cheese on Top: Sprinkle the remaining cheddar cheese evenly over the top of each filled pepper.

              Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the eggs are set and the cheese is golden brown and bubbly.

                Serve and Enjoy: Once done baking, remove from the oven and let cool slightly. Garnish with fresh herbs if desired and serve warm.
