½ cup shredded sharp cheddar cheese

¼ cup canned green chilies, drained and chopped

2 tablespoons milk

Salt and pepper, to taste

1 tablespoon olive oil or butter

4 large flour tortillas

Fresh cilantro, chopped (for garnish)

Salsa, for serving (optional)

Prepare the Egg Mixture: In a mixing bowl, crack the eggs and add the milk, a pinch of salt, and pepper. Whisk until well combined and slightly frothy.

    Add Green Chilies and Cheese: Gently fold in the chopped green chilies and shredded cheddar cheese into the egg mixture until evenly distributed.

      Heat the Pan: Place a large skillet over medium heat and add olive oil or butter. Allow it to heat until shimmering.
