Cheesy Spinach and Turkey Stuffed Shells

For the Stuffed Shells:

20 jumbo pasta shells

1 pound ground turkey

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese, plus extra for topping

1 large egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

For the Tomato Sauce:

2 cups marinara sauce (store-bought or homemade)

1 teaspoon olive oil

1/2 teaspoon red pepper flakes (optional)

1 teaspoon dried basil

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the jumbo shells and cook according to package instructions until al dente. Drain and set aside to cool.

      Prepare the Stuffing: In a large skillet over medium heat, add olive oil and sauté the minced garlic for about 1 minute until fragrant. Add the ground turkey and cook until browned, breaking it apart as it cooks. Drain any excess fat if necessary.

        Add Spinach: Stir in the chopped spinach and cook until wilted (about 2-3 minutes). Remove from heat and let the mixture cool slightly.

          Combine Filling Ingredients: In a mixing bowl, combine the cooked turkey and spinach mixture with ricotta cheese, 1/2 cup of mozzarella cheese, Parmesan cheese, egg, Italian seasoning, salt, and pepper. Mix well until fully combined.

            Make the Sauce: In a separate bowl, combine the marinara sauce with dried basil and red pepper flakes. Spread 1 cup of this sauce evenly on the bottom of the greased baking dish.

              Stuff the Shells: Carefully fill each cooked jumbo shell with the turkey and spinach filling. Place each stuffed shell in the baking dish, opening side up.

                Top the Shells: Once all the shells are filled and in the dish, pour the remaining marinara sauce over the stuffed shells. Sprinkle the remaining mozzarella cheese and extra Parmesan on top.

                  Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                    Serve: Allow the stuffed shells to cool for about 5 minutes before serving. Garnish with fresh basil or parsley if desired.
