Ingredients

8 oz (about 2 cups) pasta (penne or fusilli works best)

1 lb ground turkey

4 cups fresh spinach, chopped

1 cup ricotta cheese

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

2 cups marinara sauce

2 cloves garlic, minced

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional, for heat)

Salt and pepper to taste

1 tbsp olive oil

Fresh basil for garnish (optional)

Instructions

Cook the Pasta:

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

      Prepare the Turkey Filling:

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

          Cook the Turkey:

Add the ground turkey to the skillet. Season with salt, pepper, Italian seasoning, and red pepper flakes (if using). Cook, stirring frequently, until the turkey is browned and cooked through, about 5-7 minutes.

              Add Spinach:

Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat.

                  Mix in the Cheese:

In a large mixing bowl, combine the cooked pasta, turkey and spinach mixture, ricotta cheese, and 1 cup of mozzarella. Stir until well mixed.

                      Combine with Marinara:

Pour in 1 ½ cups of marinara sauce and mix until the pasta is evenly coated.

                          Prepare for Baking:

Preheat your oven to 375°F (190°C). Transfer the pasta mixture to a greased 9x13 inch baking dish. Spread the remaining marinara sauce on top, and then sprinkle with the remaining mozzarella cheese and Parmesan cheese.

                              Bake:

Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, until the cheese is bubbly and golden.

                                  Garnish and Serve:

Once baked, let it cool for a few minutes. Garnish with fresh basil if desired, then serve hot and enjoy!
