Cheesy Turkey and Spinach Stuffed Peppers

4 large bell peppers (any color)

1 pound ground turkey

2 cups fresh spinach, chopped

1 cup cooked quinoa (or rice)

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 tablespoon olive oil

1 cup marinara sauce (for topping)

Fresh basil (for garnish, optional)

Instructions
 

Prepare the Peppers: Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds and membranes. Set aside.

    Cook the Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until they are soft and translucent (about 3-4 minutes).

      Brown the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Season with Italian seasoning, red pepper flakes, salt, and pepper.

        Combine Ingredients: Stir in the chopped spinach, cooked quinoa, 3/4 cup of mozzarella cheese, and Parmesan cheese. Mix well until the spinach wilts down and everything is evenly combined.

          Stuff the Peppers: Spoon the turkey and spinach mixture into each bell pepper until packed full. Place the stuffed peppers upright in a baking dish.

            Add Marinara Sauce: Spoon marinara sauce over the tops of each stuffed pepper, then sprinkle the remaining mozzarella cheese evenly over the sauce.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.

                Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil if desired, and enjoy your cheesy turkey and spinach stuffed peppers!
