1 lb ground turkey

1 cup whole wheat breadcrumbs

1 egg

½ cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1 tsp dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

2 cups zucchini, spiralized (about 2 medium zucchinis)

1 cup marinara sauce (your favorite brand or homemade)

1 cup shredded mozzarella cheese

2 tbsp olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the oven to 400°F (200°C).

    Make the meatballs:

      In a large bowl, combine the ground turkey, breadcrumbs, egg, Parmesan cheese, garlic powder, onion powder, Italian herbs, salt, and pepper. Mix until just combined, being careful not to overwork the meat.

        Form the meatballs:

          Using your hands, shape the mixture into medium-sized meatballs, about 1 inch in diameter. You should yield approximately 20 meatballs.

            Sear the meatballs:

              In an oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, add the meatballs in a single layer (you may need to do this in batches). Cook for about 5-7 minutes, turning occasionally until they are browned on all sides.

                Add the marinara:

                  Pour the marinara sauce over the meatballs, ensuring they are evenly coated. Sprinkle the shredded mozzarella cheese on top.

                    Bake:

                      Transfer the skillet to the preheated oven and bake for about 15-20 minutes, or until the meatballs are cooked through and the cheese is melted and bubbly.

                        Prepare the zoodles:

                          While the meatballs are baking, spiralize the zucchini into zoodles. If you don’t have a spiralizer, you can also use a vegetable peeler to create thin strips.

                            Sauté the zoodles:

                              In a separate non-stick skillet, add a splash of olive oil and sauté the zoodles over medium heat for about 3-5 minutes until just tender. Season with salt and pepper to taste, then remove the skillet from heat.

                                Combine:

                                  Once the meatballs are cooked and the cheese is melted, remove the skillet from the oven. Carefully place the zoodles around and on top of the meatballs in the marinara sauce.

                                    Garnish and serve:
