Cheesy Turkey Quinoa Casserole

Ingredients
  

1 cup quinoa, rinsed

1 lb ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 cup bell peppers, diced (red and green)

1 cup corn (fresh or frozen)

1 can (15 oz) black beans, rinsed and drained

1 can (10 oz) diced tomatoes with green chilies

1 teaspoon cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

½ cup Greek yogurt or sour cream

½ cup chicken broth (or vegetable broth)

Fresh cilantro for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook Quinoa: In a medium saucepan, combine quinoa with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 15 minutes, or until the quinoa is tender and the water is absorbed. Set aside.

      Sauté Turkey and Vegetables: In a large skillet over medium heat, add ground turkey. Cook until browned, about 5-7 minutes, breaking it up with a wooden spoon. Drain any excess grease if necessary.

        Add Aromatics: Add diced onion and garlic to the skillet. Sauté for 3-4 minutes until the onion is translucent.

          Mix in Veggies and Seasonings: Stir in bell peppers, corn, black beans, diced tomatoes (with their juice), cumin, chili powder, smoked paprika, salt, and pepper. Cook for another 2-3 minutes until the mixture is heated through.

            Combine with Quinoa: In a large bowl, combine the cooked quinoa, the turkey and vegetable mixture, Greek yogurt (or sour cream), and chicken broth. Mix until everything is evenly incorporated.

              Layer with Cheese: Transfer half of the quinoa-turkey mixture to a greased 9x13-inch casserole dish. Sprinkle 1 cup of shredded cheddar cheese over the top. Pour the remaining quinoa mixture on top, then finish with the rest of the cheese.

                Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.

                  Garnish and Serve: Once out of the oven, let the casserole cool for a few minutes. Garnish with chopped fresh cilantro if desired. Serve hot and enjoy your hearty, cheesy meal!
