Ingredients
  

1 can (15 oz) chickpeas, rinsed and drained

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1 bell pepper (red or yellow), diced

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

Salt and pepper to taste

Lemon Vinaigrette:

1/4 cup extra virgin olive oil

Juice of 2 lemons

1 teaspoon Dijon mustard

1 clove garlic, minced

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, bell pepper, olives, feta cheese, parsley, and mint. Toss gently to mix everything together.

    In a separate bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, oregano, salt, and pepper until well emulsified.

      Pour the lemon vinaigrette over the salad and toss gently to combine, ensuring that all the ingredients are well coated.

        Taste and adjust seasoning with more salt, pepper, or lemon juice as needed.
