Chili Lime Grilled Corn

4 ears of fresh corn, husked

1/4 cup mayonnaise

2 tablespoons sour cream

2 tablespoons lime juice (freshly squeezed)

1 teaspoon chili powder (adjust to taste)

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional, for extra kick)

Salt to taste

1/4 cup crumbled cotija cheese

2 tablespoons chopped fresh cilantro (for garnish)

Lime wedges (for serving)

Prep the Corn: Start by husking the corn and removing all silk. Rinse the ears under cold water and pat them dry.

    Preheat the Grill: Heat your grill to medium-high heat (around 400°F or 200°C). If using a gas grill, preheat it for about 10-15 minutes. If using charcoal, allow the coals to turn to ash.

      Make the Chili Lime Sauce: In a medium bowl, mix together the mayonnaise, sour cream, lime juice, chili powder, smoked paprika, cayenne pepper (if using), and salt. Stir until well combined and set aside.

        Grill the Corn: Place the corn directly on the grill grates, cooking for about 10-15 minutes. Turn the corn every 2-3 minutes until the kernels are tender and grill marks appear. Avoid burning it.

          Coat the Corn: Once grilled, remove the corn from the grill and immediately brush or spread the chili lime sauce generously over each ear of corn.
