2 ripe avocados, pitted and scooped

2 cups vegetable broth, chilled

1 cup coconut milk

1/4 cup fresh lime juice (about 2 limes)

1 clove garlic, minced

1/4 teaspoon cumin powder

1/4 teaspoon black pepper

Salt, to taste

1/4 cup fresh cilantro leaves, chopped

1/2 cup cherry tomatoes, halved (for garnish)

1 small red onion, finely diced (for garnish)

1 jalapeño, thinly sliced (for garnish)

Lime wedges, (optional, for serving)

Instructions
 

Blend the Base: In a blender, combine the avocados, vegetable broth, coconut milk, lime juice, minced garlic, cumin powder, black pepper, and salt. Blend until smooth and creamy. Taste and adjust the seasoning if needed.

    Chill the Soup: Transfer the mixture to a bowl or a container, cover it, and refrigerate for at least 2 hours to allow the flavors to meld and to chill thoroughly.

      Prepare the Garnishes: While the soup is chilling, prepare the garnishes. In small bowls, arrange the halved cherry tomatoes, diced red onion, sliced jalapeño, and chopped cilantro.
