Chilled Greek Pasta Skewers

8 oz (225 g) fusilli or penne pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell pepper (red or yellow), diced

1 cup feta cheese, cubed

½ cup Kalamata olives, pitted and halved

¼ cup red onion, finely chopped

¼ cup fresh parsley, chopped

¼ cup extra virgin olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

½ tsp garlic powder

Salt and pepper, to taste

Skewers (soaked in water if wooden)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fusilli or penne pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Veggies: While the pasta cools, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber and bell pepper, chop red onion, and parsley, and pit and halve the olives.

      Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, garlic powder, salt, and pepper until well combined.

        Combine Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, olives, feta cheese, and parsley. Pour the dressing over the mixture and gently toss until everything is evenly coated.

          Assemble the Skewers: Take the skewers and begin threading the pasta and vegetable mix onto each skewer. Alternate between pasta, cherry tomatoes, cucumber, bell pepper, feta, olives, and red onion for a vibrant appearance.

            Chill: Once all the skewers are assembled, place them on a platter and cover with plastic wrap. Refrigerate for at least 30 minutes to allow the flavors to meld and the skewers to chill.

              Serve: Remove the skewers from the refrigerator, arrange them on a serving platter, and garnish with a sprinkle of extra parsley and a drizzle of olive oil if desired. Serve cold as a refreshing appetizer or side dish.
