1 cup orzo pasta

2 tablespoons olive oil

Zest of 1 lemon

Juice of 1 lemon (about 3 tablespoons)

1 teaspoon honey or agave syrup

1/4 teaspoon sea salt

1/4 teaspoon black pepper

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 bell pepper (any color), diced

1/2 cup red onion, finely chopped

1/2 cup feta cheese, crumbled (optional)

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

Cook the Orzo: In a large pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.

    Prepare the Dressing: In a small mixing bowl, combine the olive oil, lemon zest, lemon juice, honey, sea salt, and black pepper. Whisk until well blended.

      Combine Ingredients: In a large mixing bowl, combine the cooled orzo, cherry tomatoes, cucumber, bell pepper, and red onion. Pour the dressing over the salad and toss gently until everything is well coated.
