6 fresh ears of corn, husked and cleaned

2 tablespoons olive oil

2 teaspoons chipotle chili powder

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 tablespoon lime zest

2 tablespoons fresh lime juice

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup crumbled Cotija cheese (or feta cheese)

1/4 cup fresh cilantro, chopped (for garnish)

Prepare the Grill: Preheat your grill to medium-high heat (about 400°F). If you're using a gas grill, simply turn it on and allow it to heat for about 10-15 minutes. For charcoal grills, prepare your coals and let them ash over.
