Chipotle Turkey & Avocado Burrito Bake

1 lb ground turkey

1 can (15 oz) black beans, rinsed and drained

1 cup cooked brown rice

1 cup corn kernels (fresh, canned, or frozen)

1 cup diced tomatoes (canned or fresh)

1 small onion, finely chopped

2 cloves garlic, minced

1-2 tablespoons chipotle chili powder (adjust to taste)

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

1/2 cup shredded cheese (cheddar or Mexican blend)

2 large ripe avocados, diced

4 large flour tortillas

1 cup salsa (for topping)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Turkey: In a large skillet over medium heat, add a splash of olive oil and sauté the chopped onions until translucent (about 3-4 minutes). Add the minced garlic and ground turkey. Cook until the turkey is browned and cooked through, breaking it apart with a spatula.

      Add Flavor: Stir in the black beans, brown rice, corn, diced tomatoes, chipotle chili powder, cumin, smoked paprika, salt, and pepper. Cook for an additional 5 minutes, mixing well to combine all ingredients. Remove from heat and let it cool slightly.

        Prepare the Tortilla Base: In a 9x13-inch baking dish, layer two tortillas side by side. Trim as necessary to fit the dish. Spoon half of the turkey mixture over the tortillas, spreading evenly.

          Layer Avocados and Cheese: Sprinkle half of the diced avocados over the turkey mixture and follow with half of the shredded cheese. Add another layer of two tortillas on top.

            Add the Remaining Filling: Spread the remaining turkey mixture over the second layer of tortillas. Top with the rest of the diced avocados and shredded cheese.

              Bake: Pour the salsa evenly over the top of the burrito bake, adding more if desired for extra flavor. Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.
