2 cups granulated sugar

4 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking powder

1 cup semi-sweet chocolate chips

For the Cookie Dough Filling:

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 teaspoon vanilla extract

1 cup all-purpose flour (heat-treated)

1/2 teaspoon salt

1/2 cup mini chocolate chips

For the Chocolate Coating:

2 cups semi-sweet chocolate chips

1 tablespoon vegetable oil or coconut oil

Garnish (optional):

Extra mini chocolate chips

Sea salt flakes

Instructions
 

Prepare the Brownie Layer:

    - Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan and line it with parchment paper.

      - In a large mixing bowl, whisk together the melted butter and granulated sugar until combined.

        - Add in the eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.

          - In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.

            - Fold in the chocolate chips.

              - Pour the brownie batter into the prepared pan and smooth it out evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out slightly moist but with minimal crumbs. Let cool completely.

                Make the Cookie Dough Filling:

                  - In a medium bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

                                      Coat the Brownie Bombs:

                                        - Dip each brownie filled with cookie dough into the melted chocolate coating, ensuring it’s completely covered. Use a fork or a toothpick to help lift it out, allowing excess chocolate to drip off.

                                          - Place the coated brownie bombs on a lined baking sheet. If desired, sprinkle with extra mini chocolate chips or a pinch of sea salt flakes before the chocolate hardens.
