Chocolate Swirl Zucchini Bread

1 ½ cups grated zucchini (about 1 medium zucchini)

1 cup all-purpose flour

½ cup whole wheat flour

½ cup unsweetened cocoa powder

1 tsp baking soda

½ tsp baking powder

½ tsp salt

2 large eggs

1 cup granulated sugar

½ cup brown sugar, packed

½ cup vegetable oil (or melted coconut oil)

1 tsp vanilla extract

1 cup semi-sweet chocolate chips (divided)

½ tsp ground cinnamon (optional)

¼ cup chopped walnuts (optional, for added crunch)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper for easy removal.

    Prepare Zucchini: Grate the zucchini and squeeze out excess moisture using a clean kitchen towel or cheesecloth. Set aside.

      Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, cocoa powder, baking soda, baking powder, salt, and ground cinnamon (if using).

        Combine Wet Ingredients: In another bowl, beat the eggs until frothy. Add the granulated sugar, brown sugar, oil, and vanilla extract. Mix until well combined.

          Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix! Fold in the grated zucchini and ¾ cup of the chocolate chips (and walnuts, if using).

            Prepare the Swirl: Reserve the remaining ¼ cup of chocolate chips. Pour half of the batter into the prepared loaf pan. Sprinkle the reserved chocolate chips evenly over the batter. Pour the remaining batter on top.

              Swirl the Batter: Using a knife, gently swirl through the batter in a figure-eight motion to create a marbled effect. Be careful not to overdo it; you want distinct swirls.

                Bake: Place the loaf pan in the preheated oven and bake for 55-65 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (but not wet batter).

                  Cool Down: Allow the zucchini bread to cool in the pan for about 10-15 minutes. Then, transfer it to a wire rack to cool completely before slicing.
