Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup granulated sugar

½ cup packed brown sugar

½ cup unsalted butter, melted and slightly cooled

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

4 ounces cream cheese, softened

1 tablespoon powdered sugar

1 teaspoon vanilla extract (for cream cheese filling)

Extra cinnamon sugar for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease it with cooking spray.

Prepare the Cream Cheese Filling: In a small bowl, combine the softened cream cheese, powdered sugar, and 1 teaspoon of vanilla extract. Mix until smooth and set aside.

Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, granulated sugar, and brown sugar until well combined.

Combine Wet Ingredients: In another bowl, whisk together the melted butter, eggs, and vanilla extract until blended. Then stir in the buttermilk until completely mixed.

Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients, and gently fold them together using a spatula until just combined. Do not overmix; a few lumps are okay.

Fill Muffin Cups: Divide half of the batter evenly among the muffin cups, filling them about halfway. Add a generous dollop of the cream cheese mixture into the center of each muffin cup. Top with the remaining muffin batter, covering the cream cheese filling.

Add Topping (Optional): If desired, mix a sprinkle of cinnamon and sugar together and sprinkle some on top of each muffin for an extra touch of sweetness.

Bake Muffins: Place the muffin tin in the preheated oven and bake for 18-22 minutes or until a toothpick inserted into the muffin comes out clean (with the exception of crumbs from the cream cheese).

Cool and Enjoy: Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy these delicious muffins fresh or warmed up!
