1 cup all-purpose flour

1 cup rolled oats

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/2 cup unsalted butter, melted

1 large egg

1 tsp vanilla extract

1 tsp ground cinnamon

1/2 cup packed brown sugar (for cinnamon filling)

1 tbsp ground cinnamon (for cinnamon filling)

1/4 cup chopped nuts (walnuts or pecans - optional)

1/2 cup powdered sugar (for icing)

2-3 tbsp milk (for icing)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, leaving an overhang on the sides for easy removal.

    Prepare the Base: In a large mixing bowl, combine the all-purpose flour, rolled oats, 1/2 cup brown sugar, granulated sugar, baking powder, baking soda, and salt. Mix until well combined.

      Add Wet Ingredients: In a separate bowl, whisk together the melted butter, egg, vanilla extract, and 1 tsp ground cinnamon. Once mixed, pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix; it’s okay if there are a few lumps.

        Layer the Base: Spread about two-thirds of the dough mixture evenly across the bottom of the prepared baking dish. Press it down gently with your hands or a spatula to form a solid base layer.

          Make the Cinnamon Filling: In a small bowl, combine the 1/2 cup packed brown sugar and 1 tbsp ground cinnamon. If you’re using nuts, add them into this mix. Sprinkle this filling mixture evenly over the base layer in the baking dish.

            Top it Off: Then, take the remaining dough and dot or crumble it over the cinnamon filling. It doesn’t have to cover it completely—some gaps are fine.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

                Cool and Icing: Once baked, remove from the oven and allow to cool in the pan for about 15-20 minutes. While cooling, prepare the icing by whisking together the powdered sugar and enough milk to achieve a drizzle consistency.
