Ingredients

2 ripe bananas, mashed

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon (plus extra for coating)

1/4 cup milk (or dairy-free alternative)

1 large egg

1/4 cup unsalted butter, melted (or coconut oil)

1/2 cup granulated sugar (for coating)

2 teaspoons ground cinnamon (for coating)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly grease a donut pan with non-stick spray or butter.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and 1 teaspoon of cinnamon. Set aside.

Combine Wet Ingredients: In a separate mixing bowl, combine the mashed bananas, sugar, milk, egg, and melted butter. Stir until the mixture is smooth and well combined.

Combine Mixtures: Slowly add the dry ingredient mixture to the wet ingredients. Stir until just combined. Be careful not to over-mix; a few lumps are okay.

Fill the Donut Pan: Using a piping bag or a zip-top bag with a corner snipped off, carefully fill each donut cavity about 2/3 full with the batter.

Bake: Place the donut pan in the preheated oven and bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean.

Prepare Cinnamon Sugar Coating: While the donuts are baking, mix the 1/2 cup sugar and 2 teaspoons of cinnamon in a shallow bowl for the coating.

Cool and Coat: Once baked, let the donuts cool in the pan for about 5 minutes. Then, gently remove them from the pan and allow them to cool slightly on a wire rack.

Coat in Cinnamon Sugar: While still warm, roll each donut in the cinnamon-sugar mixture until well coated.

Serve: Allow the donuts to cool completely on the wire rack before serving. Enjoy your delightful Cinnamon Sugar Banana Donuts with a hot cup of coffee or tea!
