For the Meatloaf:

1 ½ pounds ground beef (preferably 80/20 for juiciness)

1 large egg

1 cup breadcrumbs (preferably plain or Italian-style)

½ cup milk

1 medium onion, finely chopped

2 cloves garlic, minced

2 tablespoons Worcestershire sauce

1 tablespoon Dijon mustard

1 tablespoon ketchup (plus extra for topping)

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon smoked paprika (optional)

For the Mashed Potatoes:

2 pounds Russet potatoes, peeled and quartered

½ cup heavy cream

4 tablespoons unsalted butter

Salt and pepper, to taste

Chives or parsley for garnish (optional)

For the Gravy:

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups beef broth

1 teaspoon soy sauce

Salt and pepper, to taste

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Meatloaf:

      - In a large bowl, combine the ground beef, egg, breadcrumbs, milk, chopped onion, minced garlic, Worcestershire sauce, Dijon mustard, ketchup, oregano, salt, pepper, and smoked paprika if using. Mix all ingredients together until just combined, being careful not to overmix.

        - Transfer the meat mixture into a loaf pan, shaping it into a loaf shape. Brush the top with additional ketchup for a sweet glaze.

          Bake the Meatloaf:

            - Place the meatloaf in the preheated oven and bake for about 1 hour or until the internal temperature reaches 160°F (70°C). Let it rest for 10 minutes before slicing.

              Prepare the Mashed Potatoes:

                - While the meatloaf is baking, bring a pot of salted water to a boil. Add the quartered potatoes and cook for 15-20 minutes or until fork-tender.

                  - Drain the potatoes and return them to the pot. Add the heavy cream, butter, salt, and pepper. Mash until smooth and creamy, adjusting seasoning to taste. Keep warm until serving.

                    Make the Gravy:

                      - In a saucepan over medium heat, melt the butter. Add the flour and whisk continuously for about 2 minutes, creating a roux.

                        - Gradually pour in the beef broth while whisking to prevent lumps. Stir in soy sauce, and cook the gravy until thickened, about 3-5 minutes. Season with salt and pepper to taste.

                          Serve:

                            - Slice the meatloaf and serve it hot alongside a generous scoop of mashed potatoes. Drizzle the savory gravy over both the meatloaf and the mashed potatoes. Garnish with chopped chives or parsley if desired.
