Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1 can (14 oz) coconut milk

1 medium onion, diced

3 cloves garlic, minced

1 inch ginger, grated

1 red bell pepper, chopped

1 cup diced tomatoes (fresh or canned)

2 cups vegetable broth

2 cups fresh spinach

2 tbsp red curry paste (or to taste)

1 tsp turmeric powder

1 tsp ground cumin

1 tsp ground coriander

Salt and pepper to taste

2 tbsp vegetable oil

Fresh cilantro for garnish (optional)

Lime wedges, for serving

Cooked rice or quinoa, for serving

Instructions

Sauté Aromatics: In a large pot, heat the vegetable oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.

Add Veggies: Incorporate the chopped red bell pepper into the pot, cooking for 3-4 minutes until slightly softened.

Spice it Up: Stir in the red curry paste, turmeric, cumin, and coriander, cooking for 1-2 minutes to toast the spices until they release their aromas.

Combine Ingredients: Pour in the diced tomatoes and vegetable broth, mixing well. Bring the mixture to a gentle simmer.

Coconut Creaminess: Add the coconut milk and rinsed chickpeas to the pot. Stir to combine and continue to simmer for 10-15 minutes, allowing the stew to thicken slightly.

Greens Galore: In the last few minutes of cooking, fold in the fresh spinach until wilted. Season with salt and pepper to taste.

Serve Up: Ladle the stew into bowls. Garnish with fresh cilantro and serve with lime wedges on the side. Pair with cooked rice or quinoa to soak up the delicious flavors.
